T he Korean pancake that is called Buchimgae (부침개) is made of flour that is soaked in egg or batter. Kimchi, green chives, and squid are somethimes indside of the pancake. Since the color of Kimchi pancake is red, it looks like a spicy pancake. It's crispy on the outside and chewy on the inside. Sometimes we call it Tizimi(지짐이) which comes from Gangwon-do(강원도) dialect.

Cōng yóu bǐng contain only scallion and has simple taste. Although it isn't sweater than pancakes that is based batter, we can eat that in place of a snack. It's crispy outside and soft like Mochi inside.

Dranik is known as a Russian standard dish, but it is originally a local dish from Belarus. Draniki is made from potatoes, but we may use pumpkin or zucchini. After cutting potato and a small amount of onion, it's seasoned with eggs, flour, salt and pepper, baked them in a frying pan, and then served them with sour cream.

पॉळॉ (DOSA), Semolina pancales, South India  

Dosa is a spicy pancake dish originated from South India. This spicy pancake is created by baking dough which is fermented rice flour. They usually dip them in tomato sauce or coconut sauce, curry when eating.


お好み焼き, Okonomiyaki, Japan  

In Japan, the style of Japanese pancakes differs from one reagion to another. First, we mix flour with eggs and water well in the bowl, and then add cut-up cabbage and pork to the dough. In the Kanto region, they put cut-up cabbage on it to make the dough before grilling the dough on a hot iron plate; however, in the Kansai region, while grilling dough on a hot iron plate, we put cabbage on top of the pancake.

Pancake in the Kansai style is called "Negiyaki." They don't put pork on the pancake.

Please spread the salty-sweet taste of sauce over the pancake after grilling dough on a hot iron. The taste blending the salty-sweet taste of sauce and the acid taste of mayonnaise is preferred by some Japanese. Red ginger and bonito flakes go well with this pancake.
