There're a wide variety of noodles that are made from rice and their principal ingredients are rice flour and water. The principal food of Vietnam is Pho and Bun which is a kind of rice noodle and the feature of Pho noodles is harder and thicker than Bun. Since "Ga" means "chicken" in Vietnamese, noodle with chicken is called Pho Ga, Bun Ga. Moreover, when we put beef in noodle soup, we call it "Pho Bo," "Bun Bo."

គុយទាវ, Kuy teav, Rice noodle,
Cambodia  

Rice noodle culture spreads over the countries in South Asia. Rice noodles are called "Kuy teav" in Cambodia, 粿條 (Guǒ tiáo) in Mandarin characters. Since rice noodles are dried a little bit, Kuy teav in Cambodia is harder than Pho in Vietnam. They said Hủ Tiếu in South Vietnam originated in Kuy teav. In Laos, they have another kind of noodle which is named "Poon" and it quite similar to Vietnamese Pho.

Pancit Palabok is thin noodle dish that has orange sauce and topped with hard boiled egg, garlic flake and whatever else you want to add.

肉燥麺(Ròu zào miàn), China, Taiwan  

This is thick noodle with fried minced beef and Cucumber. Please mix noodles well before eating it. Since noodles are called "miàn" in Mandarin, the name of the noodle dish is "Ròu zào miàn." Futhermore, they have another dish that is rice with fried minced beef, and it is called "ròu zào fàn."

물냉면(mulnaengmyeon), cold noodle
South Korea  

This is one of typical dishes in Korean, 물 mul means cold, 냉면 naengmyeon means noodle in Korean languages, As the name suggests, lots of ice is inside of soup and this cuisine might be suitable for eating in hot summer. Since noodle is quite long, we'd better cut noodle with scissors before eating. Kimchi and boiled egg goes well with cold soup. Moreover, Pyongyang city(평양 ) in North Korea is well known as Pyongyang cold noodle (평양냉면)

Tom yum goong noodle (ต้มยำกุ้ง), Thailand  

Since they squeeze lemon over soup, flavor of soup get sour and spicy and shrimp soup stock in there is very rich. Tom yum goong is name of soup, but usually put noodle in soup. Tom means shrimp in Vietnamese but boiling in thailand languages.




Hakata Rāmen(/ˈrɑːmən/), Japan  

If you'd like to know a wide variety of Ramen, let me recommend you visit the Museum of Ramen that was established in Yokohama city.

Hakata is one of the famous cities for Ramen that is made from pork bone broth. Hakata Ramen has a lightly flavored white soup made from boiled pork bones. The feature of noodles is very thin and straight. Hakata city is located in the South of Japan, belonging to Fukuoka prefecture.



Sapporo Rāmen(/ˈrɑːmən/), Japan  

S Sapporo is famous for Ramen and Beer. Miso ramen in Sapporo city is seasoned with hot and spicy miso and garlic. Sapporo Ramen makes us hot when cold weather coming. Sapporo city is situated in the center of Hokkaido island.

Tōkyō rāmen(/toʊkioʊ rɑːmən/), Japan  

I n Tokyo Ramen, after mixing soup with fish stock made from bonito flakes, it's seasoned with soy sauce.
